Kaffir Lime, Kiwi Mojito

*Warning* Kaffir limes are higher in acidity than that of normal limes, so unless you like your drinks sour I’d stay away from this one.

1/2 Kaffir Lime (juice only)
1/2 Kaffir Lime cut into wedges
1/2 Kiwi
5-8 Mint Leaves
1 1/4 oz Rum
1/2 tsp granulated sugar
Ice cubes

Muddle together in a shaker the lime juice, kiwi, mint leaves, and sugar.  Add the lime wedges and use the muddle to lightly squeeze out the juice.  Add the rum and fill the shaker with ice cubes.  Lightly shake until well chilled.  Serve and enjoy!

*If you feel it’s too sour feel free to switch to normal limes or take out the lime juice.
*If you don’t like kiwi, change it to an equal portion of your favorite fruit!  Ones that work well are mango, strawberry, and blackberry.

      I really wish I could do it more…work is just really crazy right now…and having an 8month old makes it hard to eat things worth writing about…let alone write them haha!
